100% Cocoa Mass - unsweetened chocolate callets or Pistoles™ is made from roasted beans, and ground into a smooth and homogeneous liquor. This unsweetened soul of chocolate is great for tuning and intensifying the flavour of your chocolates. It can be easily mixed with chocolate to achieve a more intense taste and colour or to create your signature chocolate recipe.
Cocoa mass also makes for a great ingredient for flavouring ice cream, ganaches, pralines or other ingredient bases to achieve a deeper, darker colour and more intense cocoa taste.
Note: Due to high temperatures or high humidity, chocolate products may melt during shipment. We only ship chocolate during fall/winter/spring months when the temperature is cooler. However, we cannot guarantee that chocolate will not melt during the shipping process. Chocolate that has encountered melting will appear dull coloured or may have greyish/white streaks and dots. This is known as 'bloom' and indicates that the cocoa butter is separating from the chocolate and is rising to the surface. Although not the prettiest in appearance, chocolates with bloom are fine to eat with little inpact to the texture or taste of the chocolate.

Perfect
A lot more intense than I expected it to be. The powerful bitterness helps develop flavours in the mouth for well over a minute. When you balance it with the right amount of sweetness, this chocolate truly sings.
