Cacao nibs are from roasted and hulled cacao beans. The first thing that chocolate manufacturers do with cacao beans is roast them. Roasting brings out the colour and flavour of the bean into what will eventually become chocolate. After roasting, the shells are removed from the cacao beans. The inner cacao bean 'meat' is broken into small pieces called cacao nibs. Made from cocoa beans that have been roasted and crushed.
Cacao nibs are crunchy, contain a dark cocoa smell and have a slightly bitter, dark chocolate/coffee taste. An all-natural ingredient that adds great texture and cocoa flavour. Can be used as a substitute for chocolate chips or nuts in ice creams, cereals, trail mixes, smoothies, etc.
