These chocolate callets (ie. chocolate chips) are made by Callebaut, the famed chocolate producer. The Callebaut brand is preferred by professionals and is a higher quality chocolate than standard consumer brands found at the grocery store.
Note: Due to high temperatures or high humidity, chocolate products may melt during shipment. We only ship chocolate during fall/winter/spring months when the temperature is cooler. However, we cannot guarantee that chocolate will not melt during the shipping process. Chocolate that has encountered melting will appear dull coloured or may have greyish/white streaks and dots. This is known as 'bloom' and indicates that the cocoa butter is separating from the chocolate and is rising to the surface. Although not the prettiest in appearance, chocolates with bloom are fine to eat with little inpact to the texture or taste of the chocolate.

This is a great product that I've used for years. When my usual supplier was out of stock I decided to give Vanilla Food Co. a try. I'm very impressed. Incredibly quick shipping at a very reasonable price -- and the best before dates on the product were much further in the future than I normally get with the other supplier. My "go to" chocolate
I love other Callebaut chocolate as well, but this one is the one I use the most. I use it in place of chocolate chips for my cookies and I mix it with darker percentages for ganache to temper the sweetness and in other baked goods that call for "dark" chocolate. I like that is has smaller callets because they melt easily as is whereas I find some of the other chocolate's callets need to be chopped finer because they are bigger. I like the percentage of chocolate as I don't care for milk chocolate and this has a nice balance of dark and sweet that I think appeals to most people's palates.

The best dark chocolate
This is the best dark chocolate I have had. I am enjoying it with my nuts and made the most decadent sourdough chocolate bread with these.

Best semi-sweet chocolate for baking
Originally I got the 70% callebaut which I found too bittersweet. This one is definitely my new go-to for ganache, chocolate cakes and frosting, brownies, etc.
